Eiersalat - German Egg Salad
Delicious Egg Salad
Eiersalat is great for appetizers, sandwiches, buffets or for snacks. This recipe is easy, simple and quick.You can add to this recipe whatever you like, such as mushrooms, nuts, pickles or finely chopped ham. I added chopped pickles to this particular recipe, but you can leave them out, if you don't like them.
Eiersalat- German Egg Salad
Ingredients
6 hard boiled eggs, peeled and chopped
1/4 cup mayonnaise
1/4 cup tartar sauce
1 teaspoon mustard
1/2 tablespoon lemon juice, fresh squeezed
3 tablespoon chives, finely chopped
2 tablespoon finely chopped dill or 1 teaspoon dried dill
12 dill pickle chips, finely chopped
salt and fresh ground pepper for taste
Direction
In a large bowl mix together mayonnaise, tartar sauce, mustard, lemon juice, chives, dill and pickles.
Then add the chopped eggs to the mayonnaise mixture and gently fold them in. Season with salt and fresh ground pepper to taste. Let sit in the fridge for 1 hour before serving. Serve with toast, bread or buns. Garnish with chopped chives.
Remember to keep Eiersalat cold like other prepared dishes with mayonnaise.

Hard cooked eggs: Place the eggs in a saucepan in a single layer. Cover with water by 1 inch. Bring water to a boil, remove from heat, and cover with a lid. Leave it covered for around 10 - 15 minutes, depending on the size of the eggs. Remove the eggs and cool them under running water.

No knead bread - Crusty Bread
Super-Easy-Simple Bread!
When I saw this video https://www.youtube.com/watch?v=13Ah9ES2yTU for the first time, I was so excited. The next day I started baking and followed the recipe exactly. The result was stunning and awesome. I spent the next few weeks in the kitchen. I delighted my friends, my neighbors and the my husband's coworkers with home-baked bread. The feedback was great! Everybody liked it and asked for more. This recipe is so easy and simple but the result is just stunning! I changed the recipe from the original a little.
Crusty Bread
Ingredients

11/2 cups unbleached all purpose flour
11/2 cups bread flour
11/2 cups bread flour
1 1/2 teaspoon salt
1/2 teaspoon instant yeast
1 1/2 cups water
In a large bowl mix together flour, salt, and yeast. Add water and mix until the dough comes together. It will be a shaggy, doughy mess. Cover bowl with plastic wrap and let it sit 12-18 hours on the counter top. Resting it overnight is great. Pour the dough on a heavy floured surface. Fold the ends of the dough over and shape it into a ball. Place your bread on a large piece of parchment paper and lift in a large bowl or round basket. Cover it with a towel. Let it rise for 2 hours.
After 1 hour, while the dough is halfway done resting, preheat your oven with a dutch oven inside to 450F.
Remove hot - very, very hot pot from the oven. Grab the ends of the parchment paper and lift the dough into the pot. Cover and return in to the oven. Bake 30 minutes with lid. Bake another 15-20 minutes uncovered. Remove the crusty bread from the oven and let it cool on a cooling rack.
Listen to the music :-) and do the happy dance!!!
If not eating right away, you can heat up later in the oven at 350F for 10 minutes or slice and freeze.

Dinner Rolls
These rolls are delicious and so easy!

Ingredients:
4 teaspoons instant dry yeast
1 tablespoons sugar
1 1/2 teaspoon salt
1/4 cup oil or melted butter
1 1/4 cup warm water-milk mixture 105 degrees
3 - 3 1/2 cup all-purpose unbleached flour

Egg wash
1 egg mixed with 1 tablespoon water

Put warm water-milk mixture, yeast, and sugar in a large bowl and mix. Let sit for 5 minutes then add salt and oil or butter, stir until salt is dissolved. Add flour slowly and stir with spoon until you can't stir any more. Start to knead with your hands. This is going to take several minutes, adding just a bit of flour at a time until it’s a soft and smooth dough.
Then form a ball and cover it. Let rise 1 hour until doubled in size.
Divide into 12 pieces and shape them round. Place the rolls in a buttered baking pan of 13'x9'. Let rise another 30 minutes covered. Brush with egg wash.
Bake in preheated oven to 375F for 15-20 minutes. Remove from oven and brush top with butter. Cool before cutting.
