Chicken Soup

Outside it's unpleasant, windy, and cold. The wind is making my house creak. I think it may be ghosts :o! I need something to get comfortable and warm! What could be better than a steaming hot bowl of home-made chicken soup :-)


 
   
Chicken Soup
Ingredients
1 large onion, chopped
4 glove garlic, minced
1 bag baby carrot, washed, big ones cut in half
5 stalks celery, chopped
3 tablespoon tomato paste
1 tablespoon sugar
1 tablespoon dried thyme
4 skinless chicken breast, washed, dried and cut in small chunks
2 teaspoon red paprika
2 teaspoon fresh ground black paprika

Preparation
Heat olive oil in a large pot over medium heat. Add the onions and sauté until golden. Then, add carrots, celery, and garlic -sauté another 4 minutes. Mix in the chicken chunks and the tomato paste - sauté them for another 4 minutes. Cover the vegetable - chicken mix with chicken stock. The mix should be submerged by about 1.5 inches. Stir in sugar, paprika, black paprika and thyme. Bring to a boil, then reduce heat and let simmer until the carrots are nice and soft. Season with salt and pepper to taste.
